Also known as Boston butt. Meat cut from the pig's upper shoulder. The meat is mixed with white tendons and little bit of fat. The meat has wonderful texture and flavors, rich in oil, won’t overcook. All-purpose meat! It's most suitable for fry, roast and stew.

又称梅花肉，中嘴，肩胛肉，胛心肉。肉质中间掺杂白色筋条和少许脂肪。口感相当好的肉，肉质鲜美，油花丰富，常煮不老。万能肉！最适合煎、炒、烤等烹调方法。
