Lard is also called “back fat” located between the skin and meat. The cooking process should not be fast, it needs to be simmered slowly. The lard can be used to make dishes, and the lard residue after can be used as a garnish of dishes.

猪油也称 “背油” 位于皮与肉之间,熬制后提取猪油后余下的硬块就是猪油渣。熬制过程不能急,需小火慢熬,取出来的猪油可用来做菜,油渣可作为菜肴的点缀。
